Chocolate Coconut Banana Bread

About the Recipe

Trust me, this one is gooooood


Wet Ingredients:

  • 2 cups mashed RIPE bananas (~4-6 bananas)

  • 4 eggs

  • 2/3 cup of veg oil

Dry Ingredients

  • 2 cups all purpose flour

  • 2 cups sugar

  • 1 (3.5 oz) box of instant vanilla pudding - you'll need only 3 oz of it and yes, I'm sure instant pudding.

  • 1 tsp baking soda

  • 1.5 tsp salt


  • 1 (3.5 oz) dark chocolate bar, yes dark, I know, I know, my fav is still milk but dark works better in this recipe

  • 1 cup of unsweetened coconut flakes


  1. Prep your ingredients! & preheat your oven at 350 degrees.

  2. Mix wet ingredients

  3. Gently fold in dry ingredients

  4. Gently fold in coconut and chocolate just until combined

  5. Bake in a greased bundt for 50 minutes. Check with a toothpick to make sure it's baked through, you may hit a chocolate chunk but that does not necessarily mean it isn't fully baked. Just try another location. If it comes out still wet, add another 5 minutes and check again.

  6. Once done, remove from the oven and let cool then flip and it and enjoy!
