Ingredients
4-6 Salmon Fillets
S&P
2 tb olive oil
2 tb butter
1 shallot, diced
4 cloves garlic, grated
1/2 tsp red pepper flakes
1 cup heavy cream
2 oz cream cheese
1/2 cup parmesan cheese
4 cups of spinach
parsley for garnish
Preparation
Season salmon fillets with s&p
Heat oil in a pan, once hot add fillets and cook for 3 min per side or according to your preference
Remove from skillet
Add butter, shallot, and garlic to pan and cook for 2 min.
Add red pepper flakes, heavy cream, cream cheese, salt & pepper. Bring to a simmer and stir constantly, ensuring uniform consistency.
Add parm and spinach and cook until spinach is wilted ~4 minutes
Add salmon back to pan
Enjoy over pasta or mashed potatoes!
