About the Recipe
Table for 2: Episode 1. This delicious meal from Half Baked Harvest is delicious and filling.

Ingredients
Salmon
-12 oz salmon, cut into bite size pieces
-1.5 tablespoons olive oil
- 1 tb chopped chipotles in adobo sauce
- 1 tb honey
- 1 tb soy sauce
-salt & pepper to taste
Salad
-1 persian cucumber, diced
-1 avocado, diced
-1/2 jalapeno, finely diced
-1/4 cup of cilantro
-1/4 cup of feta
-juice of half a lemon & half a lime
-1/4 tsp cumin
-salt and pepper to taste
Spicy mayo
-1/4 cup mayo
-1 tb chipotle in adobo
-1 tsp honey
Vinaigrette
-1/2 tb apple cider vinegar
-1/4 cup cilantro
-1 tsp honey
-2 cups cooked rice
Preparation
Prep your ingredients!
On a foil-lined baking sheet, combine all your salmon ingredients. Mix well to make sure each piece has enough marinade & bake for 12 min at 450 degrees. Broil for one minute
In the meantime, combine you ingredients for your salad in one bowl
In a separate bowl, make your vinaigrette
In a separate bowl, make your spicy mayo
Assemble your bowl (rice, salmon, salad, dressing, spicy mayo) once your salmon has cooked and enjoy.
