Tortilla Soup

About the Recipe

Delicious and hearty!

Ingredients

  • 2 tb veg oil

  • 1 onion, diced

  • 1 green bell pepper, diced

  • ½ jalapeno pepper, finely diced

  • 4 garlic cloves

  • 1 tb cumin

  • ½ tsp cayenne pepper

  • 2 tsp salt

  • ½ tsp pepper

  • 4 cups (1 carton) of veg/chicken broth

  • 2 15-oz diced tomato cans

  • 2 15-oz black bean cans, drained and rinsed

  • 1 cup cooked rice


Optional (but delicious) Toppings:

Tortilla crisps

Shredded cheese

Avocado or guacamole

Sour cream

Cilantro

Preparation

  1. Prep your ingredients!

  2. Heat oil in large soup pot then add onion, bell pepper, and jalapeno and cook for 10 min until translucent and golden.

  3. Add garlic & spices and cook for a min or until fragrant.

  4. Add broth, cans of tomato & beans. Bring to a boil then let simmer for 30 minutes.

  5. Add cooked rice and cook for another 15 minutes.

  6. Add whatever toppings you’d like and enjoy!
